Cooking with Vanalogue: Summer stew with tomato and mackerel

This simple summer stew is as easy to make as it is good to eat

When you’re living the van life there is no need to rely on supermarkets. If you’re near a river or the sea, and have all the correct licenses, why not cast out and do some fishing? There are also plenty of farmers’ markets to source local fresh fish and veg. This summer recipe uses fresh mackerel, but the fish can be easily replaced with whatever you manage to hook!

These guidelines will serve two people. For more, simply add ingredients following the ratio.

You will need:

1 Whole mackerel
1 Tin of tomatoes
1 Pepper
1 Courgette
1 Onion
Salt and pepper
Oil for frying

How to:

Chop all the vegetables
Fry until soft. Add salt and pepper to taste
While the vegetables soften, fillet the mackerel
Add the fish to the pan, skin up
Add the tin of tomatoes and give it a gentle stir
Leave to simmer for around 15 minutes, until the fish is cooked and vegetables are cooked through

We gave this one a go for ourselves and the result was delicious!
