The company have successfully refurbished 2 pubs:
The Conway Pub in Pontcanna – Cardiff’s only entry in the prestigious Michelin Pub guide this year, for the fourth year running;
Penarth’s The new Pilot – recently featured by Shortlist magazine in their list of Top 10 Pubs in Britain and named one of the Top 500 restaurants in the country by the Telegraph.
Knife & Fork also run Woods Brasserie in Cardiff Bay and The Old Swan Inn in Llantwit Major.
The Menu
In true gastro-style, the chalkboard menus will be displaying Knife & Fork signature classic dishes such as fish and chips and traditional pies – all ingredients locally grown and seasonal produce.
Executive chef, Stefan Nilsson, will also be offering dishes inspired by his many years working in European leading restaurants with a distinctly Welsh twist.
Knife & Fork Food is taking on Cyncoed pub, The Discovery. It’s their biggest gastro makeover yet – a venue with the capacity to serve up to 200 dinners in one evening.
The pub is a favourite quiz venue for ITV Chaser, Mark Labbert.
Knife & Fork, who run Pontcanna’s The Conway, will be retaining some of The Discovery’s existing staff and creating approximately 20 more jobs.
Sean Murphy, the company’s managing director says he hopes the new Discovery will be a go-to location and continue with their core concept of “good food, good wine and great atmosphere.”
The pub will be closing in January 2014, allowing the company just two months to refurbish the premises ready for their grand opening on 7 March.
