1) Heat up 1tsp oil in a non-stick pan or wok. Add 225g Welsh lamb leg steak cut into very thin slices, half a thinly-sliced aubergine, 1 sliced onion and 3 sliced mushrooms. Cook, stirring until the meat is browned – about 6 minutes.
2) Add 1tbsp mild curry paste and 1 tbsp mango chutney. Stir and cook for a further 2 minutes.
3) Add 1 thinly-sliced tomato and a handful of chopped coriander leaves.
4) Divide the mixture between two flour tortilla wraps, roll them up and enjoy!
One of Cardiff’s most popular Indian restaurants has been awarded a Michelin Bib Gourmand, making it one of only two establishments in the whole of Wales to have been given the prize.
Indian restaurant and takeaway Mint and Mustard has been recognised by Michelin for the second year running, and adds the title to its growing list of accolades. In the past week, the restaurant has also been named on the The Sunday Times Food List – the only eatery in Cardiff to make the cut.
Restaurant co-owner Ajit Kandoran said: “It’s fantastic to be given Bib Gourmand status again, and a great testament to the team we have here who keep raising the bar in terms of quality.”
