Your mooncakes recipe

Ingredients
- 250g icing sugar
- 125g rice flour (fried)
- 50g vegetable oil
- a few drops banana essence
- 110g cool water (boiled)
- a few drops green colouring
- 1kg red bean paste or lotus paste for filling
- Salted egg yolk (optional)
Procedure:
- Sift the rice flour and the icing sugar into a mixing bowl. Mix them well.
- Mix water, colouring, and banana essence thoroughly.
- Make a whole in the centre of the flour. Pour in liquid mixture and Crisco.
- Stir quickly with a wooden spoon. Keep the dough aside for 20 to 30 minutes.
- Cut the dough into small round pieces.
- Prepare the filling into small balls.
- Put a portion of the filling into the centre of the dough and seal it up.
- Roll it with some fried rice flour and place the dough into the mould, press it.
- Let the dough out of the mould carefully. Here is your mooncake!
A new Eastern delicacy has arrived in Cardiff as the Chinese community celebrates the Mid-Autumn Festival.
Mooncakes, a typical treat for the festival, have been available in the city’s Chinese markets since 27 September, and until they run out of stock.
Mooncakes are small, round pastries consisting of a thin crust enveloping a dense filling than can be sweet or salty – the most popular fillings include lotus seed paste; red beans; salted egg yolk.
They are a symbol of the full moon, which reaches its peak of brightness during the Mid-Autumn Festival, therefore also known as Moon Festival.
“Only a few are left”, said Tan Yaqin, owner of a local Chinese store, “and we will only order more for next year’s festival.”
