How to make chunky winter ratatouille

We all love a speedy meal and this ratatouille is just that. In fact, you’ll be able to pull it all together in about half an hour. It’s full of flavour and fibre and, with the garlic bread on top, it makes for quite the hearty meal.

If you’re looking for a lighter meal, you don’t have to make the garlic bread – it oozes with butter…

You will need:

1 onion (either white or red will do), roughly chopped

1 clove of garlic, grated

1 aubergine, chopped into approximately 1 inch cubes

1 courgette, same as the aubergine

1 tin of chopped tomatoes

2 tsps of smoked paprika

A generous knob of butter

Salt and pepper to taste

For the garlic bread –

A crusty white baguette (get this from your local bakery for minimal packaging)

Approx. 50g salted butter

1 clove of garlic, grated

Olive oil

To make:

Add a good glug of olive oil to a large saucepan and start frying the onions over a medium heat. As they begin to turn slightly golden in colour, add the garlic.

When the onions have softened, add in the aubergine and courgette. Reduce the heat to medium-low and put the lid on the pan, stirring occasionally until both the aubergine and courgette are cooked through (around five minutes).

Add the paprika to the pan and stir until all the veggies are coated.

Next, mix in the tomatoes and bring to the boil. Add in the butter and turn down the heat, letting it simmer with the lid on for another five minutes.

Season with salt and pepper et voila!

For the garlic bread –

Leave the butter to soften or whack it in the microwave for a couple seconds.

Mix in the garlic.

Then, slice along the bread at 1 inch intervals (don’t slice fully through!).

Distribute the garlicky butter evenly between the slices and bake at 200 degrees (180 fan) for five minutes or until the loaf is golden and the butter has all melted.

Easy – tuck in!
