Cooking on the road can be tricky, especially without a fridge and limited cooking resources. The trick of cooking in a cramped van is not to do too much of it but cooking in one pot you can really push your creativity. So here’s a handy recipe you can try out for yourself with a couple of store cupboard ingredients. With this one pot meal it’s not only super tasty and easy but you won’t have to worry about the washing up either..
That means you can spend more time drinking beer and enjoying the sunset.
Easy one pot courgette and lemon risotto
Serves 2
50g of butter
1 onion
1 garlic clove, crushed
180g risotto rice
1 veg cube
Zest and juice of 1 lemon
2 lemon and thyme sprigs
250g courgette
50g parmesan
2tbs of creme fraiche
(Add chorizo for some more spice)
Method
Add the butter to the pan and let it melt in the pan. Add onion and fry in the pan until softened for approx 8 minutes, then add the garlic. Stir in the rice to coat with the butter and onion mix for a couple of minutes.
Boil a 1 litre of water and add a stock cube and a ladle of stock to the rice along with the lemon and the thyme. Keep on a low heat remembering to stir constantly. When most of the liquid has absorbed to the rice add another ladle of stock. Add the courgette and keep adding the stock and stir for 1 min until the mixture is tender and creamy. Add the rice to coat with the buttery onion mix.
To serve, stir in some seasoning, the lemon zest, parmesan and crème fraîche.
(Fry and add some chorizo if you’re a meat lover for a little extra spice)
