Cooking with Vanalogue: A romantic risotto

Melt your partner’s heart and fill their stomach at the same time with this nourishing and filling meal

Nothing says loving, dedicated and romantic like a well-cooked bowl of warm, succulent risotto.

Risotto takes time, just like a trusting relationship between you and your loved one; be it the person of your dreams, or your van. Once everything is cooking together, the amazing smells will ease the strain of stirring your way to someone’s heart. Simply follow this process, adding or swapping ingredients as you see fit to create the perfect meal for two this VANentines.

To serve two, you’ll need:

  • 140g Arborio (risotto) rice
  • 150ml white wine
  • 500ml hot vegetable stock
  • 1 Onion, sliced
  • 140g chestnut mushrooms, sliced
  • 4 sundried tomatoes, chopped
  • 1 large garlic clove, crushed
  • 100g fresh spinach or kale
  • Parsley, 2 tbsp (optional)
  • 3 skinless chicken breast, cut into chunks (optional)

How to:

  1. In a large saucepan (preferably deep), add chopped onions, mushrooms and garlic and allow to cook for 5 minutes.
  2. Add chunky chicken to cook in the juices and stir in (optional)
  3. Stir in the rice, soaking it in the pan, then add wine gradually, continuing to stir and mix the ingredients
  4. Once the wine is absorbed, lower heat and simmer in tomatoes and hot stock until rice is tender
  5. Stir in parsley, scatter and mix in spinach or kale. Add some parmesan cheese or green salad to serve
