Pancake Day recipes: Your guide to a flippin' good day

It’s Pancake Day Cardiff! But what are the best combinations? Do you go for American or English Pancakes? Sweet or savoury pancakes? And then what toppings? Don’t worry, the Cardiffian is here to help with a few of our favourites.

First up we’ve gone for a savoury treat, because we all know that one guy who tells everyone he’s only going to eat pancakes all day. So this one is to make sure he doesn’t crash in to a sugar coma and still gets his vitamins.

Butternut squash and goats cheese

You will need:

1 Butternut squash

100g goats cheese

300ml milk

1 egg

200g self-raising flour

1sp baking powder

Butter

 

1. Dice up your squash and fry in a pan for ten minutes.

2. While that’s cooking, make your pancake mix by combining the flour, baking powder and salt. Make a well in the middle of the bowl and pour in the egg and milk.

Melt your butter and pour in just enough pancake mix to cover the base of the pan. Leave on a moderate heat, flipping after a few minutes.

3. When the squash has browned melt in your goats cheese.

4. Place your pancakes on the plate and put your squash and goats cheese on top. Dress with salad leaves.

 

Chocolate and banana

You will need:

300ml milk

1 egg

200g self-raising flour

1sp baking powder

1 banana

1 chocolate bar

 

 

1. Melt your butter and pour in just enough pancake mix to cover the base of the pan. Leave on a moderate heat, flipping after a few minutes.

2. Melt chocolate on while the batter mix is still in the pan. Slice up your banana and place on top to serve.

Pear and blueberry pancakes

You will need:

300ml milk

1 egg

200g self-raising flour

1sp baking powder

1 pear

20g blueberries

 

1. Melt your butter and pour in just enough pancake mix to cover the base of the pan. Leave on a moderate heat. Add the blueberries to the pan and flip the pancake after a few minutes.

3. Peel and slice the pear, then place over a moderate heat to cook, adding sugar after a few minutes.

4. To serve, add fresh blueberries and your cooked pears.

 

The classic

Classic Pancake

You will need:

1 lemon

1 tsp sugar

 

 

 

 

 

1. Melt your butter and pour in just enough pancake mix to cover the base of the pan. Leave on a moderate heat, flipping after a few minutes.

To serve, squeeze your lemon juice over the pancake and add your sugar.
